Slow Cooker Meat Loaf

Serves 12 to16


 3 lbs ground turkey or beef

1 lrg zucchini, grated

1 medium carrot, grated

1 medium onion grated with juice

1 bunch spinach, finely chopped

3 cloves garlic, minced

1½ tsp dried basil

1 tsp dried oregano

1 ½ tsp sea salt

½ tsp pepper

1cup stock (chicken or beef), white or red wine (dependent on your meat choice), or your favorite marinara sauce


  1. Grate zucchini and onion directly into crock-pot. Add all ingredients except stock to the pot and mix well.
  2. Form into loaf pulling meat away from sides.
  3. Finish off with stock, wine or marinara.
  4. Cover and cook on low 4-5hrs or until internal temp of 160 degrees.

*Serve with cauliflower, parsnip mash and grilled asparagus

This recipe is great for batch cooking. Refrigerate meat loaf overnight (it’s less likely to fall apart), then simply cut into individual portions and freeze.
